Beat the Heat

No one really likes to cook in the summertime, since it's just too hot slaving over a hot stove in a hot kitchen. It's much more fun cooking out on the grill. Unfortunately, we can't cook everything on the grill and it's nice to have a nice cool salad or some side to go with that grilled chicken, steak, or even hot dogs and hamburgers.

I have a great love for pickled foods and this quick and easy little yummy was passed on to me by my mom, not sure where she got it from, but if you also like pickled foods and need a creative yet easy side to serve with your dinner, I recommend trying it.

Place peeled and moderately thick sliced cucumbers along with thinly sliced white onions in a sealing container containing a mixture of 1 part white vinegar and 2 parts water, covering the cukes and onions, then place in the refrigerator. Just remember, the longer you leave it soaking, the more "pickled" they will taste, so keep an eye on it. Make sure to use a sealed container, or everything in your fridge will smell like vinegar. The cukes are pickled and so are the onions, and even if you don't like onions much, this seems to make them taste better.
