Trick For Tender Turkey
I know it's not Thanksgiving time, but I'm a turkey freak and I like to eat a nice Thanksgiving style turkey dinner at random times throughout the year. I'm not exactly sure where I heard this trick (it might have been Paul Harvey's radio show but who knows??) for making your bird come out juicy and tender instead of dry and tough: Turn the bird upside down and cook it with the back up (breast down). This makes the juices running off as it is cooking run down the bird instead of into the bottom of the pan, where you have to pull the old turkey baster out and do the job yourself. Since we've started doing this, not only is the bird better tasting and more tender, never dry and never tough, and we NEVER have to baste during cooking.
